Spinach, Egg, + Cheese Breakfast Flautas
Ingredients:
- 2 siete foods cassava flour tortillas 
- 2 eggs 
- 4 cups of spinach, raw 
- 2 TBSP feta cheese 
- 1 TBSP avocado oil 
- 1 TBSP garlic ghee 
- Optional: avocado and hot sauce for topping 
Directions:
- Add 1 TBSP of garlic ghee to a pan and cook spinach until wilted. 
- In the same pan, add 2 eggs and feta cheese. Scramble eggs in with spinach mixture. Set aside. 
- Heat a cast iron skillet on high heat with 1 TBSP of avocado oil. 
- Add 2 tortillas to soften - only needs about 15-30 seconds; until bendable. 
- Divide spinach, cheese, and egg mixture into each tortilla and roll up tightly. 
- Place tortillas in the heated cast iron skillet. Cook for about 30-45 seconds rotating 4 times total. Tortilla should be golden brown around. 
- Plate and serve with avocado, hot sauce, and a sprinkle of cheese and red pepper on top!
