Cookie Dough Energy Bites
Ingredients:
- 5-7 pitted Medjool dates, presoaked in water 
- 1 cup of cashews or mixed nuts, presoaked in water 
- 2 TSP vanilla 
- 1/2 cup oatmeal 
- 1/3 cup chocolate chips 
- 1/4 cup maple syrup 
Directions:
- Mix all in a food processor. 
- Refrigerate for 30 minutes. 
- Roll into 18-20 energy bites. 
- Store in fridge for up to 2 weeks!
