Carrot Cake Breakfast Cookies
Ingredients:
- 1 cup oats (I use the blue + white bag from @traderjoes ) 
- 2 medium ripe bananas, mashed 
- 1/3 cup peanut butter 
- 1/4 cup walnuts, chopped 
- 2 TBSP maple syrup 
- 1 TSP cinnamon 
- 1 TBSP chia seeds 
- 1/2 cup shredded carrots 
Directions:
- Preheat oven to 350. 
- Mix all ingredients in a bowl well. Using a TBSP or cookie scoop form 10-12 cookies. 
- Line a baking sheet with parchment paper. Place cookies on parchment paper. 
- Bake on 350 for 15-20 minutes. 
- Remove, sprinkle with more cinnamon, + let cool. 
- Refrigerate up to one week!
